事实上,不少欧洲料理都受到土耳其料理的影响。土耳其咖啡就是欧洲咖啡的始祖——“欧洲人拦住了土耳其的弓刀,却没能挡住土耳其的咖啡”。

1453年,拜占庭帝国正式灭亡的消息传回欧洲。当时的传言说,奥斯曼帝国的士兵半夜喝一种神秘黑水,喝了之后眼神似刀剑,能连夜攻城。没有想到吧,咖啡才是攻破当时屹立千年的君士坦丁堡的秘密。

烘烤过的咖啡豆子磨粉后,倒入咖啡壶中加水加糖,煮沸后不会过滤咖啡渣直接饮用。更传统的做法还会使用热沙或者炭火反复慢煮。

世界上第一间咖啡店位于伊斯坦布尔,名为“Kahve Hane”,人们通常来这里谈生意,顺手玩玩西洋棋或者十五子棋。当时人人都跟着皇室喝咖啡的潮流,成为好妻子的标准也包括了会煮一杯好咖啡。
