一、陈皮牛腿肉

用料:牛后腿肉500克,水约1500克。陈皮约40克。精盐、料酒、味精、胡椒粉、白糖、酱油、香油、辣椒油、糖色、花生油、干辣椒、葱、姜、花椒。陈皮牛腿肉

4、烧沸后,撇掉浮沫,改为小火烧透(熟),再用大火收汁至浓,最后加味精,淋入适量香油、红油翻拌均匀,即可将牛肉片倒出晾凉。

5、食用时拣出葱段、姜片、辣椒,装在盘里,上面淋些原汁。

功效:陈皮具有理气调中、祛湿化痰的功效。对脾胃气滞证及湿痰、寒痰、咳嗽等有一定疗效。牛肉具有健脾益肾、补气养血、强筋健骨的功能。牛肉配陈皮有止咳化痰、生津开胃、顺气消食等功效。

二、酱牛腿肉

用料:牛腿肉、五香粉,糖,盐,酱油,八角,干辣椒,姜片,花椒,料酒。

制作过程

1.把一整块牛腿肉(两斤重)切成三块,洗干净.锅里放上冷水,放入切好的牛肉(水没过牛肉),大火煮开,取出牛肉,洗净。PS:小腿肉有筋有肉比较适合做酱牛肉

2.锅内放入适量的清水(没过牛肉),再放五香粉,糖,盐,酱油,八角,干辣椒,姜片,花椒,料酒。煮到可以用筷子简单戳穿为止。PS:如果用高压锅,上气后煮10分钟左右即可。

3.将煮好的牛肉在汤中浸泡一个晚上,第二天取出,再放置几个小时,使其表面干爽,比较好切.切的时候要注意,不要顺着肉的纹理,最好是垂直,这样吃的时候不费劲.

4.将切好的牛肉盛盘.取少许牛肉卤汁,加热,浇在牛肉上,再放上香油和葱花.PS:如果觉得牛肉偏淡(特别是中间的肉),就在卤汁中再加点酱油,或是根据自己的口味调制酱汁.

三、淮杞炖牛腿肉

用料:牛肉(后腿)250克,山药(干)枸杞子,桂圆肉。姜20克,小葱10克,盐3克,江米酒10克,黄酒10克,植物油10克

1、将姜去皮洗净,捣成茸,浸泡入米酒中成姜汁酒,备用;

2、淮山药、枸杞子、桂圆肉洗净,放入炖盅内;
